Buddha bowls are not only delicious, they are incredible easy to make. The whole family is guaranteed to like them! Make it fun by letting the little ones get their hands busy creating their own bowls. They can customize it as they please and satisfy each and every one of their own specific cravings.

We went with boiled eggs, but these Buddha bowls are scrumptious topped with just about everything. Try tofu, tempeh, chicken or shrimp! Mix it up and change it every time to keep your taste buds alive!

Brussels Sprouts + Kale Detox Buddha Bowl

Ingredients:

  • 4-6 large kale leaves 

  • 3 cups Brussels sprouts

  • 1/4 cup olive oil

  • 1 Tablespoon Dijon mustard

  • 2 Tablespoons fresh lemon juice

  • ½ teaspoon sea salt

  • 1 Tablespoon Maple Syrup 

  • 1/4 cup of raw veggies of choice – chopped 

  • ½ cup Chick peas- drained and rinsed. 

Directions

1. Rinse off the vegetables.  Slice the kale and brussels sprouts very finely or shred in the food processor.

2. Mix together the olive oil, mustard, lemon juice, sea salt and honey.

3. Pour dressing over kale and Brussels and massage. Let sit for a few mins.

4. Chop veggies of choice, and place on top of greens.

5. Add chick peas

6. Chop the almonds finely or pulse in food processor until chopped.

7. Toss all ingredients together in a bowl and enjoy.
